Product Description
For nearly two decades, we have worked closely with João Hamilton dos Santos at Sitio Canaã in Caconde, Brazil. His dedication to quality and sustainability, alongside Fazenda Ambiental Fortaleza (FAF), has shaped the way this farm produces coffee, with a focus on regenerative agriculture and precise post-harvest methods.
This Java varietal traces its roots to Ethiopia before making its way to Southeast Asia. In 2014, FAF introduced seeds from Nicaragua’s Selva Negra farm, a direct descendant of the original Typica planted in Java centuries ago. Planted at Sitio Canaã, this varietal has adapted well, developing a distinct profile with guava and passionfruit, balanced by milk chocolate and a delicate floral intensity.
Last year, Brazil faced its worst drought in 50 years, and devastating fires swept through coffee-growing regions, threatening farms and livelihoods. João and his team navigated these extreme conditions with resilience, protecting their crops through sustainable soil management and careful adaptation. Despite the challenges, this harvest reflects the strength of their approach—producing a coffee with clarity, sweetness, and a refined texture, shaped by both the land and the care it receives.
