It’s a cup that opens in layers - vibrant tropical acidity, silky structure, and a finish that keeps stretching. This is one of those rare lots that feels both composed and wild at the same time. 

It comes from a place of deep intentionality, shaped by a 40-hour anaerobic fermentation that lifts the aromatics and deepens the fruit expression without compromising clarity.

About the Farm:

Villa Betulia sits in the highlands of Acevedo, Huila, and has become one of the most influential farms in Colombia’s specialty landscape. It’s run by Luis Aníbal Calderón, a second-generation producer whose story echoes the trajectory of Colombian coffee itself. For decades, the farm grew standard cultivars under the constraints of the C-market. But in 2011, with prices at a breaking point, Luis stood to lose everything. Instead, he made a hard pivot toward risk, toward flavor, toward the unknown.

In 2012, he planted his first 5,000 Gesha trees. Three years later, he began transitioning the entire farm to exotic varieties, at a time when most of the country was still focused on volume. 

Today, Villa Betulia cultivates more than 20 varieties, and Luis has become known for his mastery of extended fermentations and slow, controlled drying as a way to preserve integrity in the cup.

About the Variety:

This lot - a Java variety processed with a 40-hour anaerobic fermentation - is one of the cleanest, most expressive examples we’ve tasted. Java itself is rarely seen in Colombia. 

It’s low-yielding, susceptible to disease, and requires a precision most producers can’t afford to gamble on. But in Luis’s hands, it works. The fermentation brings a gentle lift to the aromatics - fruit-forward, but not loud - and the cup stays structured all the way through.

Why is Villa Betulia Special?

What we love most about this coffee is its balance and brightness. It’s a reminder of what’s possible when producers chase nuance, not just impact. And it fits into a broader shift we’re seeing across Huila: a move away from generic profiles and toward identity-driven coffees, built from the ground up.

Villa Betulia represents that shift. This is not just a special lot -  it’s the result of over a decade of deliberate change, from a producer who reimagined his farm at a moment when it could’ve all ended.
